Description

A delightful Blueberry Swirl Cheesecake combining creamy cheesecake with a sweet blueberry swirl.


Ingredients

  • 1.5 cups graham cracker crumbs
  • 0.25 cups sugar
  • 0.5 cups unsalted butter, melted
  • 4 packages (8-ounce) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup blueberry puree
  • 0.25 cups sugar (for blueberry sauce, if desired)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix the graham cracker crumbs, 0.25 cups of sugar, and melted butter in a medium bowl until it resembles wet sand.
  3. Press this mixture into the bottom of a 9-inch springform pan.
  4. Combine softened cream cheese and 1 cup of sugar in a large mixing bowl. Beat until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Mix in the vanilla extract and sour cream until fully combined.
  7. Blend blueberries in a blender or food processor to create a smooth puree.
  8. Pour half of the cheesecake filling over the crust, drizzle some blueberry puree, and swirl gently.
  9. Repeat with the remaining filling and blueberry puree.
  10. Bake for 55 to 65 minutes until the edges are set.
  11. Cool in the oven for 1 hour with the door ajar, then refrigerate for at least 4 hours.
  12. Serve with fresh blueberries or additional blueberry sauce.
