- 1.5 cups graham cracker crumbs
- 0.25 cups sugar
- 0.5 cups unsalted butter, melted
- 4 packages (8-ounce) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup blueberry puree
- 0.25 cups sugar (for blueberry sauce, if desired)
Instructions
- Preheat your oven to 325°F (163°C).
- Mix the graham cracker crumbs, 0.25 cups of sugar, and melted butter in a medium bowl until it resembles wet sand.
- Press this mixture into the bottom of a 9-inch springform pan.
- Combine softened cream cheese and 1 cup of sugar in a large mixing bowl. Beat until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the vanilla extract and sour cream until fully combined.
- Blend blueberries in a blender or food processor to create a smooth puree.
- Pour half of the cheesecake filling over the crust, drizzle some blueberry puree, and swirl gently.
- Repeat with the remaining filling and blueberry puree.
- Bake for 55 to 65 minutes until the edges are set.
- Cool in the oven for 1 hour with the door ajar, then refrigerate for at least 4 hours.
- Serve with fresh blueberries or additional blueberry sauce.
