Description
Carrot Cake Cheesecake combines moist spiced carrot cake with creamy cheesecake layers and tangy cream cheese frosting.
Ingredients
Carrot Cake: 1 cup flour, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp salt, 1/2 cup sugar, 1/2 cup oil, 2 eggs, 1 1/2 cups carrots, 1/4 cup pineapple
Cheesecake: 8 oz cream cheese, 1/4 cup sugar, 1 egg, 1/2 tsp vanilla
Frosting: 1/2 cup cream cheese, 2 tbsp butter, 1 cup powdered sugar, 1/2 tsp vanilla
Instructions
1. Preheat oven 350°F.
2. Make carrot cake batter.
3. Spread half in pan.
4. Beat cheesecake mixture.
5. Layer over batter.
6. Add remaining carrot cake batter.
7. Bake 50–55 minutes.
8. Cool and frost.
9. Chill before serving.
Notes
Chill overnight for clean slices.
Add nuts or raisins for texture.
Freeze unfrosted cake up to 2 months.
