- 24 ladyfingers
- 1 cup espresso, cooled
- 1/2 cup amaretto liqueur
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups fresh cherries, pitted and halved
- 1/4 cup sugar (for cherry compote)
- Cocoa powder, for dusting
Instructions
- Start by preparing the cherry compote. In a saucepan, combine the pitted cherries and 1/4 cup sugar. Cook over medium heat until the cherries release their juices and the mixture thickens, about 10 minutes. Set aside to cool.
- In a mixing bowl, combine the cooled espresso and amaretto. Dip each ladyfinger into the mixture briefly, ensuring they are soaked but not soggy.
- In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold in the mascarpone cheese until well combined.
- In a trifle dish or a rectangular serving dish, layer half of the soaked ladyfingers, followed by half of the mascarpone cream mixture, and then half of the cherry compote. Repeat the layers with the remaining ingredients.
- Dust the top with cocoa powder and refrigerate for at least 240 minutes, preferably overnight, before serving.
Notes
Ensure to cool the cherry compote before layering to prevent the dessert from becoming runny.
