Ingredients

  • 3/4 cup unsweetened cocoa powder

  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup hot brewed coffee
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1/2 cup heavy cream (for caramel)
  • 1 cup granulated sugar (for caramel)
  • 1/2 cup light corn syrup (for caramel)
  • 1/4 cup water (for caramel)
  • 1/2 teaspoon salt (for caramel)
  • 1/2 cup chopped nuts (optional, for crunch layer)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together the flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla extract. Beat for two minutes until well combined.
  4. Slowly stir in hot brewed coffee until the batter is smooth.
  5. Pour the batter into prepared pans and bake for 30 to 35 minutes or until a toothpick comes out clean.
  6. Cool the cakes in the pans for 10 minutes, then invert onto a wire rack.
  7. Combine sugar, corn syrup, water, and salt in a saucepan over medium heat to make the caramel.
  8. Stir until dissolved, then let it cook until deep amber, about 8 to 10 minutes.
  9. Whisk in heavy cream carefully; let cool slightly.
  10. Melt remaining butter and sugar for the toffee crunch in another saucepan until deep amber, then stir in nuts.
  11. Pour onto a parchment-lined sheet and let it harden before breaking into pieces.
  12. Beat remaining butter until creamy, add powdered sugar gradually, and mix in caramel for frosting.
  13. Assemble by layering cake, frosting, more caramel, and toffee crunch pieces.
  14. Top with remaining frosting and drizzle with caramel.

Notes

For best results, ensure cakes are completely cooled before frosting.
