- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 (3.4 oz) box instant vanilla pudding mix
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, and salt in a bowl.
- Beat the softened butter with the brown sugar and granulated sugar until creamy.
- Add the instant pudding mix and continue mixing until fluffy.
- Crack in the eggs one at a time, mixing well after each addition.
- Pour in the vanilla extract and mix until smooth.
- Slowly add the flour mixture into the butter-sugar mixture, stirring gently until combined.
- Fold in the mini chocolate chips evenly throughout the dough.
- Use a cookie scoop or your hands to shape dough balls of about 2 tablespoons each.
- Bake in the preheated oven for 10-12 minutes until lightly golden on the edges.
- Let the cookies rest on the baking sheet for about 5 minutes, then transfer to a cooling rack.
Notes
For thicker cookies, consider chilling the dough for about 30 minutes before baking.
