Description

A delightful cheesecake featuring rich chocolate flavors swirled with tart cranberry puree, perfect for fall and winter celebrations.


Ingredients

  • 215 g fresh cranberries
  • 155 g granulated sugar
  • 1.5 tbsp cornstarch
  • 3 tbsp water
  • 302 g chocolate sandwich cookie crumbs
  • 70 g salted butter, melted
  • 169 g dark chocolate chips
  • 0.5 tsp vanilla extract
  • 120 ml heavy whipping cream
  • 678 g cream cheese, room temperature
  • 207 g granulated sugar
  • 25 g all-purpose flour
  • 230 g sour cream
  • 1 tbsp vanilla extract
  • 4 large eggs, room temperature

Instructions

  1. Combine cranberries, 155 g sugar, cornstarch, and water in a medium saucepan. Cook over medium heat for 8–10 minutes until cranberries soften.
  2. Process the cranberry mixture until smooth, pressing through a fine mesh sieve to remove skins. Let cool.
  3. Preheat oven to 163°C (325°F). Line a 23-cm springform pan with parchment and grease the sides.
  4. Mix cookie crumbs and melted butter, pressing into the base of the pan. Bake for 10 minutes and cool.
  5. In a bowl, heat heavy cream to boiling and pour over dark chocolate chips and vanilla extract. Let sit, then whisk until smooth.
  6. Lower oven temperature to 148°C (300°F). Mix cream cheese, 207 g sugar, and flour until smooth. Add sour cream and vanilla. Beat in eggs one at a time.
  7. Spread one-third of the batter into the crust. Drop spoonfuls of cranberry filling and chocolate fudge, swirling with a toothpick. Repeat with remaining batter and fillings.
  8. Place the pan in a baking dish and add warm water halfway up the sides of the pan. Bake for 1 hour and 20 minutes.
  9. Turn off the oven and leave the cheesecake inside for 30 minutes. Crack the oven door open for another 30 minutes.
  10. Let cheesecake chill until firm, at least 5–6 hours or overnight.
  11. Remove from the pan, slice, and serve.

Notes

Serve with whipped cream, fresh berries, or drizzle with chocolate sauce for added flavor.
