Ingredients
2 tbsp olive oil
1 lb chicken breast or thighs, cut into strips
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning
4 cloves garlic, minced
2 tbsp butter
2 cups heavy cream (or 1½ cups cream + ½ cup milk)
1 cup chicken broth (low sodium)
12 oz fettuccine or penne pasta (cooked al dente)
1½ cups freshly grated Parmesan cheese
½ tsp red pepper flakes (optional)
2 tbsp chopped parsley
Instructions
1. Heat olive oil in a skillet over medium-high. Season chicken with salt, pepper, and Italian seasoning. Cook 5–6 minutes until golden and cooked through. Remove and keep warm.
2. Melt butter in the same pan. Add garlic; sauté 30 seconds until fragrant.
3. Stir in cream and broth. Simmer 5 minutes, stirring often.
4. Lower heat; add Parmesan. Stir until smooth and creamy.
5. Add cooked pasta and chicken back to the skillet. Toss until coated.
6. Taste, adjust seasoning, garnish with parsley and red pepper flakes. Serve hot.
Notes
Loosen sauce with a splash of reserved pasta water if too thick.
Use thighs for more flavor, breasts for leaner option.
Add spinach, broccoli, or mushrooms for vegetables.
Refrigerate leftovers up to 3 days; reheat with broth or milk.
