- Lightly grease a 9-by-13-inch baking dish with butter or olive oil.

- Arrange the potatoes in the prepared baking dish.
- Melt the butter in a saucepan over medium heat.
- Add the finely chopped onion or shallot and cook for 4–5 minutes until soft.
- Add the garlic and cook for approximately 30 seconds.
- Stir in the flour and cook for 1 minute.
- Slowly pour in the milk while whisking continuously.
- Add the heavy cream and cook for 3–5 minutes until slightly thickened.
- Stir in the Parmesan, parsley, thyme, garlic powder, salt, black pepper, and optional nutmeg.
- Pour the warm cream sauce evenly over the sliced potatoes.
- Move the potatoes gently so the sauce flows between the layers.
- Cover the baking dish tightly with foil.
- Bake for approximately 40 minutes.
- Remove the foil and test the centre potatoes with a knife.
- Sprinkle the mozzarella, cheddar or Gruyère, and Parmesan evenly over the top.
- Bake uncovered for another 20–25 minutes until bubbling and golden.
- Broil for 1–3 minutes if additional browning is desired.
- Allow the potato bake to rest for 10–15 minutes before serving.
