- 2 pounds Beef Chuck (cut into chunks)
- 2 medium Onions (chopped)
- 2 tablespoons Olive Oil (for sautéing)
- 2 tablespoons Sweet Paprika
- 1 tablespoon Smoked Paprika (optional)
- 1 teaspoon Caraway Seeds
- 1 teaspoon Marjoram
- 1/4 teaspoon Cayenne Pepper (optional)
- 4 cloves Garlic (minced)
- 2 tablespoons Tomato Paste
- 4 cups Beef Broth
- 1 cup Dry Red Wine (optional)
- 1 can Diced Tomatoes
- 1 cup Bell Peppers (chopped)
- 2 cups Potatoes (cubed)
- 1 cup Sour Cream
- 2 tablespoons All-Purpose Flour
- to taste Salt
- to taste Pepper
- 1/4 cup Fresh Parsley (for garnish)
- optional Noodles or Spätzle (for serving)
Instructions
- Prepare the ingredients: cut beef, chop onions, peppers, and potatoes, and mince garlic.
- Heat olive oil in a large pot. Brown beef in batches for 5-7 minutes, then set aside.
- In the same pot, cook onions until soft (3-4 minutes), then add garlic and cook for another minute.
- Add sweet paprika, smoked paprika, caraway, marjoram, and cayenne; cook for 1-2 minutes.
- Add beef back to the pot along with broth, wine, tomatoes, peppers, and potatoes; stir to combine.
- Bring to boil, reduce heat, cover, and simmer for 90-120 minutes until beef is tender.
- Combine sour cream and flour; stir into goulash and allow to thicken for 10-15 minutes.
- Season with salt and pepper. Garnish with parsley before serving.
- Enjoy on its own or serve with noodles or Spätzle.
Notes
Allow flavors to meld, and consider making in advance. Freezes well for up to 3 months.
