Description

A delicious twist on the classic lasagna, featuring creamy spinach and mushrooms, perfect for vegetarian and mushroom lovers.


Ingredients

  • 12 lasagna noodles
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 8 ounces mushrooms, sliced (such as cremini or button)
  • 4 cups fresh spinach (or 2 cups frozen, thawed and drained)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 2 cups ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  4. Stir in minced garlic and sliced mushrooms. Cook for an additional 5-7 minutes until mushrooms are browned.
  5. Add fresh spinach and cook until wilted. If using frozen spinach, add and stir until heated through. Season with oregano, basil, salt, pepper, and nutmeg (if desired). Remove from heat.
  6. In a mixing bowl, combine ricotta cheese, egg, 1 cup of mozzarella, and half of the Parmesan. Mix until smooth.
  7. Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish. Layer 4 lasagna noodles over the sauce.
  8. Spread half of the ricotta mixture, half of the spinach mushroom mixture, and a third of the remaining marinara. Repeat the layers one more time.
  9. Top with the last 4 lasagna noodles and spread the remaining marinara sauce. Sprinkle with remaining mozzarella and Parmesan.
  10. Cover with aluminum foil and bake for 25 minutes.
  11. Remove foil and bake for another 15 minutes until cheese is bubbly and golden.
  12. Let cool for 10-15 minutes before slicing and serving.

Notes

For meal prep, assemble ahead of time and freeze before baking. Use fresh spinach for better texture.
