Description

Easy Pecan Pie Cookies combine a buttery cookie base with gooey pecan filling. Bite-sized, festive, and perfect for holiday gatherings or gifting.


Ingredients

Scale

1 cup butter, softened

½ cup sugar

1 egg yolk

1 tsp vanilla

2 cups flour

½ tsp salt

1 cup pecans, chopped

½ cup brown sugar

¼ cup corn syrup

2 tbsp butter

1 tsp vanilla


Instructions

1. Preheat oven to 350°F (175°C).

2. Cream butter, sugar, egg yolk, and vanilla.

3. Mix in flour and salt.

4. Roll dough into balls; press into mini muffin tin.

5. Heat brown sugar, syrup, and butter until smooth.

6. Remove from heat; add vanilla and pecans.

7. Spoon filling into cups.

8. Bake 12–15 minutes until golden.

9. Cool before removing.

Notes

Swap pecans for walnuts if preferred.

Drizzle cooled cookies with chocolate for variation.

Freeze baked cookies up to 2 months.
