Description

A delightful dessert featuring a light chocolate sponge cake filled with whipped cream and cherries, topped with more cream and chocolate shavings.


Ingredients

  • 6 large eggs, separated
  • 3/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling or cooked Morello cherries
  • 1/4 cup dark chocolate shavings (optional)
  • 10 to 12 maraschino cherries or fresh cherries, for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  2. In a bowl, beat egg yolks and granulated sugar until pale and thick.
  3. In another bowl, sift cocoa powder, flour, baking powder, and salt.
  4. In a clean bowl, beat egg whites until stiff peaks form.
  5. Gently fold the dry ingredients into the yolk mixture, then fold in the whipped egg whites.
  6. Pour batter into pan and spread evenly. Bake for 10–12 minutes or until the cake springs back to the touch.
  7. Invert the cake onto a clean kitchen towel dusted with powdered sugar. Peel off parchment and roll the cake in the towel. Let it cool completely.
  8. In a clean bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  9. Unroll the cake, spread the whipped cream evenly, and spoon on cherry filling.
  10. Re-roll cake (without towel), seam-side down.
  11. Frost the top with the remaining whipped cream, and garnish with chocolate shavings and cherries.
  12. Chill for at least 1 hour before slicing and serving.

Notes

Pairs well with vanilla ice cream or fresh fruits. Store in an airtight container in the refrigerator or freeze for later.
