Instructions

- Divide the dough into two equal parts and shape each into a log about 1.5 inches in diameter.
- Wrap each log in plastic wrap and chill in the refrigerator for at least 1 hour.
- Slice the logs into 1/4 inch thick rounds, brushing the tops with egg yolk if desired.
- Place the rounds on the baking sheet, spaced about 2 inches apart.
- Bake for about 12 to 15 minutes, or until the edges are lightly golden.
- Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
