Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Beat the softened butter and granulated sugar together until light and fluffy.
  3. Add the vanilla extract and sea salt to the mixture, continuing to beat until well integrated.
  4. Slowly add the sifted all-purpose flour, mixing until the dough forms and pulls away from the bowl.
  5. Divide the dough into two equal parts and shape each into a log about 1.5 inches in diameter.
  6. Wrap each log in plastic wrap and chill in the refrigerator for at least 1 hour.
  7. Slice the logs into 1/4 inch thick rounds, brushing the tops with egg yolk if desired.
  8. Place the rounds on the baking sheet, spaced about 2 inches apart.
  9. Bake for about 12 to 15 minutes, or until the edges are lightly golden.
  10. Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
