Description

A quick and easy frozen dessert made with mixed berries and a creamy whipped topping, coated in chocolate.


Ingredients

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. In a blender, combine the mixed berries and blend until smooth.
  2. In a bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
  3. Gently fold the berry puree into the whipped cream until well combined.
  4. Pour the mixture into a lined baking pan, spreading evenly.
  5. Freeze for at least 240 minutes or until solid.
  6. In a microwave-safe bowl, melt the chocolate chips and coconut oil together until smooth.
  7. Remove the frozen dessert from the pan and cut into bars.
  8. Dip each bar into the melted chocolate and place on a tray until the chocolate hardens.
  9. Serve immediately or store in the freezer.

Avoid overmixing the whipped cream and ensure the bars are frozen solid before dipping in chocolate.
