Description

High Protein Creamy Cajun Chicken Rice—juicy chicken, fluffy rice, and a smoky Cajun cream sauce. One-pan, protein-packed, and easy for weeknights.


Ingredients

1 lb chicken breast, cubed

2 tbsp olive oil

2 tsp Cajun seasoning

½ tsp paprika

1 tsp salt

½ tsp black pepper

1 cup long-grain white rice

2½ cups chicken broth

½ cup heavy cream (or Greek yogurt)

½ cup Parmesan cheese

1 red bell pepper, diced

1 onion, chopped

3 garlic cloves, minced

2 tbsp parsley, chopped


Instructions

1. Season chicken with Cajun seasoning, paprika, salt, and pepper.

2. Heat oil in skillet; cook chicken until golden, 5–6 minutes. Remove and set aside.

3. Sauté onion, pepper, and garlic 3 minutes.

4. Add rice and broth. Bring to boil, then reduce heat, cover, and simmer 15–18 minutes.

5. Stir in cream, Parmesan, and parsley. Return chicken, stir until creamy.

6. Taste, adjust seasoning, and serve hot.

Notes

Use brown rice for more fiber (longer cooking time).

Swap cream with Greek yogurt for lighter version.

Add spinach or mushrooms for extra vegetables.
