Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 pinch salt
  • 2 large eggs (room temperature preferred)
  • 1/2 cup milk or milk alternative
  • 1 tablespoon maple syrup (optional)
  • 1 teaspoon vanilla extract (pure recommended)
  • Cooking spray or coconut oil (for greasing the pan)

Instructions

  1. Add oats, protein powder, baking powder, cinnamon, and salt to a blender and blend until fine.
  2. In a bowl, whisk together eggs, milk, maple syrup, and vanilla until frothy.
  3. Pour wet ingredients into the blender with dry ingredients and pulse until just combined.
  4. Let the batter rest for 5-10 minutes, adding milk if too thick.
  5. Heat a non-stick pan over medium heat and grease lightly.
  6. Pour 1/4 cup of batter for each pancake and cook for 2-3 minutes until bubbles form.
  7. Flip and cook for another 1-2 minutes until golden brown.
  8. Keep pancakes warm on a plate while cooking the remaining batter.
