- 1/2 teaspoon cinnamon
- 1 pinch salt
- 2 large eggs (room temperature preferred)
- 1/2 cup milk or milk alternative
- 1 tablespoon maple syrup (optional)
- 1 teaspoon vanilla extract (pure recommended)
- Cooking spray or coconut oil (for greasing the pan)
Instructions
- Add oats, protein powder, baking powder, cinnamon, and salt to a blender and blend until fine.
- In a bowl, whisk together eggs, milk, maple syrup, and vanilla until frothy.
- Pour wet ingredients into the blender with dry ingredients and pulse until just combined.
- Let the batter rest for 5-10 minutes, adding milk if too thick.
- Heat a non-stick pan over medium heat and grease lightly.
- Pour 1/4 cup of batter for each pancake and cook for 2-3 minutes until bubbles form.
- Flip and cook for another 1-2 minutes until golden brown.
- Keep pancakes warm on a plate while cooking the remaining batter.
- Serve warm with toppings like fruits, yogurt, or honey.
