- 1 1/2 cups graham cracker crumbs
- 1/3 cup butter, melted
- 1/4 cup sugar
- 4 (8-ounce) packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1/2 cup lemon juice
- Zest of 2 lemons
- 1 cup lemon curd
- 3 egg whites
- 1/2 teaspoon cream of tartar
- 1 cup sugar
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs, lemon juice, and lemon zest; mix until well combined.
- Pour the cheesecake mixture over the crust and bake for 45-50 minutes until set.
- Let cool, then chill in the fridge for at least 4 hours.
- Spread lemon curd over the chilled cheesecake.
- For the meringue, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form.
- Spread the meringue over the lemon curd and use a kitchen torch to lightly brown the top.
- Chill until ready to serve.
