Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup butter, melted
  • 1/4 cup sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/2 cup lemon juice
  • Zest of 2 lemons
  • 1 cup lemon curd
  • 3 egg whites
  • 1/2 teaspoon cream of tartar
  • 1 cup sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs, lemon juice, and lemon zest; mix until well combined.
  4. Pour the cheesecake mixture over the crust and bake for 45-50 minutes until set.
  5. Let cool, then chill in the fridge for at least 4 hours.
  6. Spread lemon curd over the chilled cheesecake.
  7. For the meringue, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form.
  8. Spread the meringue over the lemon curd and use a kitchen torch to lightly brown the top.
  9. Chill until ready to serve.
