Ingredients

- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch pan.
- Mix together flour and powdered sugar, then cut in butter until crumbly. Press mixture into the bottom of the prepared pan.
- Bake for 15 minutes until lightly golden.
- Whisk together granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt until well combined.
- Pour lemon mixture over the crust and bake for an additional 20 minutes, or until set.
- Allow to cool, then cut into bars and serve.
Notes
Serve with tea or coffee, and consider adding whipped cream or berries for extra flavor.
