- 2 large egg whites
- ½ cup granulated sugar
- ⅛ teaspoon cream of tartar
- A pinch fine sea salt
- ½ teaspoon pure vanilla extract (optional)
Instructions
- Prepare Ingredients: Gather all your ingredients and measure them out.
- Make the Lemon Mixture: In a medium saucepan over low heat, melt the butter and add lemon juice, sugar, and lemon zest. Stir until combined.
- Add Marshmallows: Add the marshmallows to the saucepan and continue stirring until melted and smooth.
- Stir in Rice Krispies: Remove from heat and fold in the Rice Krispies until coated.
- Transfer to a Baking Dish: Quickly transfer the mixture into a greased baking dish and press down evenly.
- Make the Meringue: In a clean bowl, beat egg whites and slowly add sugar and cream of tartar until stiff peaks form.
- Spread Meringue: Spread the meringue over the top of the Rice Krispie layer, creating peaks.
- Bake: Preheat oven to 350°F (175°C) and bake for 10-12 minutes until golden brown.
- Cool and Slice: Let cool completely before slicing into squares.
