Description

A colorful and healthy Mediterranean Lentil Salad with a refreshing lemon dill dressing, perfect as a main dish or side.


Ingredients

  • 1 cup dried green or brown lentils
  • 3 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, chopped
  • 1/2 cup Kalamata olives, halved
  • 1/3 cup red onion, finely chopped
  • 3/4 cup feta cheese, crumbled
  • 2 tablespoons fresh dill, chopped
  • Salt and black pepper to taste
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, finely minced
  • 2 tablespoons fresh dill, finely chopped
  • 1/2 teaspoon maple syrup or honey

Instructions

  1. Rinse the lentils under cold water to remove any debris.
  2. Combine the lentils with the water or vegetable broth in a medium saucepan. Heat until boiling, then reduce heat and let it simmer for 20 to 25 minutes until just tender.
  3. Drain the lentils and allow them to cool.
  4. Chop the cucumber, halve the cherry tomatoes and olives, slice the onion, crumble the feta cheese, and chop the fresh dill.
  5. In a small bowl, whisk together olive oil, lemon juice, lemon zest, Dijon mustard, minced garlic, chopped dill, and maple syrup or honey. Season with salt and pepper to taste.
  6. In a large mixing bowl, combine the cooked lentils, chopped vegetables, olives, feta, and dill.
  7. Pour the dressing over the lentil mixture and toss gently to coat everything evenly.
  8. Let the salad sit for 15 to 30 minutes for flavors to blend.
  9. Serve cold or at room temperature, garnishing with additional dill or lemon zest if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 5 days. Add a splash of olive oil or lemon juice if the salad seems dry after refrigeration.
