Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, mix together all dry ingredients: flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and ground cinnamon.
- In another bowl, whisk together vegetable oil, eggs, and vanilla extract.
- Combine wet and dry mixtures gently, then fold in the diced apples and optional chopped nuts.
- Pour batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes, checking for doneness with a toothpick.
- While the cake cools, make the frosting by beating cream cheese, butter, powdered sugar, and vanilla extract until smooth.
- Once the cake is completely cool, frost it generously with the cream cheese frosting.
- Slice and serve the cake.
