Description

A rich and indulgent chocolate layer cake with creamy peanut butter filling and smooth chocolate ganache.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup creamy peanut butter
  • 1 cup heavy cream
  • 8 ounces semisweet chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
  2. Mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla to the dry ingredients, then mix well.
  4. Stir in boiling water until the batter is smooth (the batter will be thin).
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool the cakes in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. Beat the peanut butter and heavy cream together until light and fluffy for the filling.
  9. Place one cake layer on a serving plate and spread a layer of peanut butter filling on top.
  10. Add the second cake layer and repeat with more filling.
  11. Place the final cake layer on top.
  12. Heat the heavy cream for the ganache until simmering, then pour it over the chopped chocolate in a bowl. Stir until smooth.
  13. Pour the ganache over the top of the cake, allowing it to drip down the sides.
  14. Slice and enjoy your indulgent chocolate peanut butter layer cake.

Notes

For best results, allow cake layers to cool completely before frosting to avoid melting the filling.
