A rich and indulgent chocolate layer cake with creamy peanut butter filling and smooth chocolate ganache.

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup creamy peanut butter
- 1 cup heavy cream
- 8 ounces semisweet chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
- Mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla to the dry ingredients, then mix well.
- Stir in boiling water until the batter is smooth (the batter will be thin).
- Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cakes in the pans for 10 minutes before transferring them to wire racks to cool completely.
- Beat the peanut butter and heavy cream together until light and fluffy for the filling.
- Place one cake layer on a serving plate and spread a layer of peanut butter filling on top.
- Add the second cake layer and repeat with more filling.
- Place the final cake layer on top.
- Heat the heavy cream for the ganache until simmering, then pour it over the chopped chocolate in a bowl. Stir until smooth.
- Pour the ganache over the top of the cake, allowing it to drip down the sides.
- Slice and enjoy your indulgent chocolate peanut butter layer cake.
Notes
For best results, allow cake layers to cool completely before frosting to avoid melting the filling.
