Description

A refreshing No Bake Summer Berry Icebox Cake, filled with fresh berries and creamy goodness, perfect for hot days.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh mixed berries (strawberries, blueberries, raspberries)
  • 1 package (14 oz) graham crackers

Instructions

  1. Whip the heavy cream, powdered sugar, and vanilla extract together until soft peaks form.
  2. Take a rectangular dish and layer with graham crackers.
  3. Spread a layer of the whipped cream mixture over the graham crackers.
  4. Add a layer of mixed berries over the whipped cream.
  5. Repeat the layers until the dish is full, finishing with whipped cream on top.
  6. Cover the dish and refrigerate for at least 4-6 hours or overnight.
