- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 cup pumpkin puree
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 325°F (160°C).
- Combine the graham cracker crumbs, 1/3 cup sugar, and melted butter in a bowl.
- Press the mixture firmly into a greased 9×9-inch baking pan.
- Beat the cream cheese and 1 cup sugar until smooth.
- Add the pumpkin puree, eggs, vanilla extract, pumpkin pie spice, and salt, mixing until fully combined.
- Pour half of the cheesecake mixture over the crust and gently swirl in the remaining mixture on top.
- Bake for 40-45 minutes until slightly jiggly in the center.
- Cool at room temperature and then refrigerate for at least 2 hours before slicing into bars.
Notes
Using room temperature ingredients ensures smoother mixing and avoids cracks. Don’t overmix the filling.
