Description

A delightful dessert combining the classic flavors of tiramisu with the tartness of fresh raspberries.


Ingredients

  • 16 oz (450 g) mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest, optional
  • 2 cups fresh raspberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 20–24 ladyfinger biscuits
  • 1/2 cup raspberry juice or raspberry syrup
  • 1 1/2 cups fresh raspberries (for layering)
  • 2 tablespoons powdered sugar (for dusting)

Instructions

  1. Place 1 cup of raspberries, sugar, and lemon juice in a small saucepan.
  2. Cook over medium heat for 3–5 minutes until the berries soften and release juices.
  3. Lightly mash the berries and then let it cool completely.
  4. In a mixing bowl, beat the heavy cream until soft peaks form.
  5. Make sure the cream stays smooth and airy—don’t beat it until stiff or dry.
  6. In another bowl, combine the softened mascarpone cheese, powdered sugar, vanilla extract, and lemon zest. Stir until smooth.
  7. Gently fold the whipped cream into the mascarpone mixture until it’s fluffy.
  8. Pour the raspberry juice or syrup into a shallow bowl.
  9. Quickly dip each ladyfinger into the juice for just 1–2 seconds to soak them.
  10. Arrange a layer of the dipped ladyfingers in a glass trifle dish or bowl.
  11. Spread a layer of the mascarpone cream over the ladyfingers.
  12. Spoon some raspberry sauce on top and scatter fresh raspberries.
  13. Add another layer of dipped ladyfingers.
  14. Add more mascarpone cream, followed by more raspberry sauce and the remaining fresh raspberries.
  15. Finish with a thick layer of cream on top.
  16. Cover with more fresh raspberries and dust with powdered sugar.
  17. Refrigerate for at least 240 minutes or overnight before serving for the best flavor.

Notes

Avoid soaking ladyfingers for too long in the raspberry juice to prevent them from becoming soggy.
