- 1 cup cottage cheese
- 2 ripe bananas
- 1 cup oats
- 1/4 cup honey or maple syrup (optional)
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract (optional)
- 1/2 teaspoon cinnamon (optional)
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the ripe bananas in a mixing bowl.
- Add the cottage cheese, oats, honey or maple syrup, baking powder, vanilla extract, cinnamon, and salt to the bowl, and mix well until combined.
- Spoon the mixture evenly into the muffin tin.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow to cool before removing from the tin.
Notes
For extra flavor, consider adding nuts, seeds, or dried fruits. Store muffins in an airtight container for optimal freshness.
