Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a slow cooker, add the beef chuck, carrots, potatoes, onion, and garlic.
- Pour in the beef broth and stir in the tomato paste, thyme, bay leaf, salt, and pepper.
- Cover and cook on low for 480 minutes or on high for 300 minutes, until the beef is tender.
- Discard the bay leaf before serving.
