Ingredients

  • 2 cups sourdough discard (Ensure it’s active for best flavor)
  • 1/2 cup milk (Room temperature)
  • 1/4 cup sugar
  • 1/4 cup butter, melted (High quality for better flavor)
  • 1 piece egg
  • 2 1/2 cups all-purpose flour
  • 1 packet instant yeast (2 1/4 tsp)
  • 1/2 tsp salt
  • Fruit preserves or ingredients for filling (e.g., cream cheese, poppy seeds) (Choose based on preference)

Instructions

  1. In a large bowl, combine the sourdough discard, milk, sugar, melted butter, and egg. Mix until well combined.
  2. In a separate bowl, whisk together the flour, instant yeast, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  4. Turn the dough onto a floured surface. Knead for about 5-7 minutes until smooth and elastic.
  5. Place the kneaded dough in a greased bowl, cover with a clean cloth, and let it rise in a warm spot for about 60-120 minutes or until doubled in size.
  6. After the dough has risen, punch it down to release air bubbles. Divide into pieces about the size of a golf ball.
  7. Roll each piece into a small circle, about 4-5 inches in diameter. Gently press down the center for the filling.
  8. Place a spoonful of your chosen filling in the center of each dough circle.
  9. Fold the edges over the filling, pinching to seal. Place seam side down on a baking sheet lined with parchment paper.
  10. Cover the kolaches and let rise for another 30-45 minutes.
  11. Preheat your oven to 375°F (190°C).
  12. Bake for 15-20 minutes, or until golden brown on top. Remove from the oven and cool slightly before serving.

Notes

For best flavor, ensure your sourdough discard is active before use. Avoid overfilling to prevent spillage during baking.
