Description

A visually stunning and refreshing summer drink featuring layers of vibrant colors and flavors.


Ingredients

Scale
  • 1/2 cup Pink Dragon Fruit Syrup (120ml, chilled)
  • 1 cup Butterfly Pea Flower Tea (240ml, brewed with 2 tbsp sugar)
  • 1/4 cup Fresh Lemon Juice (60ml)
  • 1/2 cup Sparkling Water (120ml, chilled)
  • 2 cups Jagged Clear Ice (Approx 300g)
  • 1 wheel Fresh Yellow Lemon (sliced thin)

Instructions

  1. Start by brewing the butterfly pea flower tea. In a pot, add 2 tablespoons of sugar to 1 cup of hot water and mix until dissolved. Then, add the butterfly pea flowers and steep for about 5-10 minutes until the color deepens. Strain the tea and let it cool down.
  2. While the tea cools, prepare the pink dragon fruit syrup by blending fresh or frozen dragon fruit and straining it to get the syrup. Ensure it’s chilled when ready to use.
  3. In a tall glass, add a layer of jagged clear ice to fill it about one-third full.
  4. Pour 1/4 cup of the pink dragon fruit syrup over the ice.
  5. Next, carefully pour 1/2 cup of butterfly pea flower tea over the back of a spoon.
  6. Then, add 1/4 cup of fresh lemon juice on top of the tea.
  7. Finish off by adding the sparkling water gently to the top and, if desired, garnish with a thin slice of fresh yellow lemon.

Notes

Avoid mixing all the ingredients together; the fun lies in the beautiful layers. Use chilled ingredients for the best presentation.
