- 1 tablespoon low-sodium taco seasoning
- 3/4 cup freshly shredded Mexican cheese blend or Colby jack cheese
- Toppings: cilantro, red onion, pico de gallo, pickled jalapeños, extra shredded cheese, cherry tomatoes, or green chiles
Instructions
- Blend the base. Add the cottage cheese and taco seasoning to a blender or food processor. Blend until the mixture becomes completely smooth and creamy.
- Transfer to a microwave-safe bowl. Pour the blended mixture into a microwave-safe bowl, add the shredded cheese, and stir until it combines.
- Melt gently in short intervals. Microwave the bowl for 30 seconds at a time, stirring well after each interval until the cheese fully melts.
- Add toppings and serve. Spoon the hot queso into a serving bowl and top with your favorite garnishes, serving immediately with tortilla chips or fresh vegetables.
- Store leftovers properly. Let the dip cool, store in an airtight container in the refrigerator for up to 4 days, and reheat as needed.
